This is banana-rum flavored mead. It is approximately 12% alcohol by volume.
My night is good.

did you just flavor the mead or did you distill it yourself?
Either way, bravo and I must get the exact recipe.
I have another question. Do you think this drink would still be good with a higher alcohol content in the area of 23-26%? I'm looking for a drink that is easy to drink yet has a reasonably high alcohol content.

CWG, the wine yeast will die at approximately 17% alcohol by volume, the only way to boost this is by adding the extracts at the end. Yes it would be good still, though maybe not as good, but the issue is distilling it would destroy the flavor...it's meant to be drank more like beer.
Recipe:
6 oz by volume of honey per quart
4 oz by volume of banana extract per quart
8 oz by volume rum extract per quart
half cup of sugar per quart (can be changed to suit tastes)
1/16oz wine yeast per quart (wasn't 100% sure on this one) by volume
1-2oz maple syrup
First put in the honey
Second, add boiling water (or near boiling, I used an erator)
Third, stir thoroughly, the honey should have a completely liquid consistency
Fourth, add the yeast.
Fifth, stir until the yeast is thoroughly spread out.
Sixth, add the sugar in.
Seventh, add the maple syrup and stir thoroughly. Make sure it's liquid consistency (if the water is boiling this should take 15-20 secs of stirring)
Let sit for 2-3 weeks at at least 80 degrees F (shorter at higher temperatures). Complete fermentation isn't extremely important with this. I've honestly left it for 2-3 days and drank it. There should be an airtight cap on it..I would suggest stretching a balloon over the top
As soon as you pull the balloon off it will be exposed to oxygen, this will form vinegar if let sit too long. So ASAP add the extracts, the excess alcohol from them should kill most of the remaining yeast. Then, run it through a coffee filter. Next (and last) cool it in something that will cool it quickly. Once cool, no more yeast will respirate...thus stopping production of alcohol, vinegar, or any other byproduct.

Review:
Taste I'd give it about a 8.75 for the initial taste...
The aftertaste however I'd give a 9.25, it makes you want more.
I'd give it a 8 on composition, it is lightly carbonated, and it seems to go well with it, however it doesn't "look" nice. It's rather cloudy, and a bit thick. Then again that's what I wanted (the thick not cloudy.)
As far as the kick goes, this stuff will get you messed up FAST especially when cold. You can barely taste alcohol, but there is quite a bit there. So I'd say about a 9.5. This is comparable to "caribou lou" in how fast it gets me fucked up (listen to the song :))

Naw it shouldn't, I added a bit of everclear to a small cup for ya to test, and I could barely taste it. I'd say it boosted it at least 11-12% conc.
But as far as adding alcohol content...that would be difficult.

Perhaps, perhaps not. Me and my buddy Scott went through a little "phase" where we brought everclear to just about every party we went through. That same bottle pictured on the post below actually :) good times (that's the 650mL one right?)
Anyways, I always mixed it with sunny D, but Scott..well..he walked around with the bottle, drank straight from it. But yeah, just saying, people do drink it straight from the bottle, it's just something that doesn't happen often. It's absolutely disgusting to do so but yeah...
