I baked these cupcakes for work and thought I'd share some frosting recipes, they're my "go to" frostings, pretty much.
Vanilla buttercream -
1/2 cup sugar
1/5 cup water
3 egg yolks (separate egg yolks from whites by going back and forth between the split shell)
1 teaspoon vanilla extract
1/4 teaspoon almond extract
4 tablespoons powdered sugar
Heat sugar & water over medium heat until sugar is dissolved.
Whisk egg yolks together and stir into sugar & water mixture over low heat for a couple of minutes until the consistency thickens.
Cool to room temperature, and whisk together with extracts and 1 tablespoon powdered sugar at a time until you reach your desired consistency.
Raspberry buttercream
1/4 cup butter
1/4 cup raspberries
1 teaspoon vanilla extract
2 teaspoons milk
5 tablespoons powdered sugar
Bring butter to room temperature and cream, add the raspberries & extract and mix until smooth. slowly alternate between adding milk and powdered sugar until you reach your desired consistency.
