What would be the best place to start out for a complete beginner wanting to learn modeling and animation in Alias Maya?

there is no quick and easy way to learn that program. I have been playing iwth it off and on for around a month now, and I can almost make a ball that bounces realisticly. use the tutorials, explore the menus and if your like me use some notes to keep track of what does what and after a while you will be ale to make some thing that looks pretty cool

I ended up with the book "Learning Maya 7 | Foundation" but Maya PLE will only run in 256 colors, or else it crashes to desktop. Any suggestions as to what might fix it?

Do you have an OpenGL gfx card?
